Super Bacon and Egg Scramble

Serves 2.
Ingredients:
6 Manning Valley Free Range Eggs
2-3 rashers bacon – diced
1 tbsp coconut or olive oil or butter
2-3 tbsp milk of choice
1 small Onion – diced
Chives – chopped
Pre-cooked roasted capsicum
Parmesan cheese
Sea salt and black pepper
Method:
Whisk 6 Manning Valley Free Range Eggs with the milk
Saute bacon and onion in oil or butter
Fold in roasted capsicum
Add milk and egg mixture to the pan
Cook for a few minutes folding eggs over to scramble.
Fold in chopped chives
Serve with parmesan cheese and sea salt and black pepper
