Healthy Apple Pancakes

Serves 4.

Nutritional facts:


Dry Ingredients:

  • 1 cup spelt flour

  • 2 tsp baking powder

  • 1 tsp cinnamon

  • ½ tsp mixed spice

Wet Ingredients:

  • 1 large or 2 small– shredded pealed apples

  • 2 Manning Valley Free Range Eggs – whisked

  • 1 tsp vanilla extract

  • 1 cup almond milk or milk of choice

  • 1 tbs coconut oil

  • ¼ cup Greek Style yoghurt

Method:

  1. Combine dry ingredients and the wet ingredients each in separate bowls

  2. Then slowly mix the two together and blend until smooth

  3. Heat a hot plate or pan and drizzle in some coconut oil

  4. Cook each pancake until bubbles form on the surface, then flip over and continue to cook until golden on both sides

  5. Serve with mixed berries and maple syrup
